 "Dom Pérignon, a seventeenth-century cellarmaster of the Abbey of Hautvillers, is revered as the spiritual father of winemaking in the Champagne region. Keen observation, respect for nature, pragmatic creativity, technical innovation, the courage of his convictions, and patience were the instruments serving his vision. He constantly mastered and incorporated all its components and the stages of its production, from the vineyards themselves to the pressing and clarification of the wines and their preservation. Dom Pérignon was the originator of new techniques for cultivating vines and making wine. These innovations spread rapidly throughout the region. Today, Dom Pérignon is produced by France's largest Champagne house, Moët et Chandon. Dom Pérignon’s principle contribution in the 20th century has been its commitment to vintage years. In addition to the exclusive use of Pinot Noir and Chardonnay grapes from only the finest growths and vineyards, Dom Pérignon strictly limits itself to wines of the very best years, which have undergone long ageing. The Dom Pérignon style is constructed by the Chef de Cave to create a range of sensations on the palate that reflect all the complexity of the structure, and the aromas and characteristics of the vintage."

"Dom Pierre Pérignon, O .S .B., (December 1638–14 September 1715) was a French Benedictine monk who made important contributions to the production and quality of champagne wine in an era when the region's wines were predominantly still red. Popular myths frequently, but erroneously, credit him with the invention of sparkling champagne, which didn't become the dominant style of Champagne until the mid-19th century. The famous champagne Dom Pérignon, the prestige cuvée of Moët & Chandon, is named for him. The remains of the monastery where he spent his adult life is now the property of that winery. Pérignon was born to a clerk of the local marshal in the town of Sainte-Menehould in the ancient Province of Champagne in the Kingdom of France. He was born in December 1638 and was baptized on 5 January 1639. He was the youngest of his parents' seven children, as his mother died the following summer. His father's family owned several vineyards in the region. As a child Pérignon became a member of the boys' choir school operated by the Benedictine Abbey of Moiremont, studying there until 1651, when he went to study at the Jesuit college in Châlons-sur-Marne. When he was 17 he entered the Benedictine Order near the town of Verdun at the Abbey of Saint-Vanne, the leading monastery of the Congregation of St. Vanne. The congregation was a reform movement of monastic life, and he followed a regimen of prayer, study and manual labor, as prescribed in the Rule of St. Benedict. In 1668 he was transferred to the Abbey of Hautvillers, where he served as cellarer for the rest of his life. Under his stewardship, the abbey flourished and doubled the size of its vineyard holdings, while he worked to improve their product with the help of Dom Thierry Ruinart, a noted scholar of the abbey. When Pérignon died in 1715, as a sign of honor and respect, he was buried in a section of the abbey cemetery traditionally reserved only for abbots. That cemetery is now the property of the local commune."

"Dom Pérignon is always a vintage champagne, meaning that it is not made in weak years, and all grapes used to make the wine were harvested in the same year. From 1921 to 2005, Dom Pérignon champagne has been produced in 41 vintages. More than two vintage years in a row used to be a rare phenomenon, which until 2004 had only occurred three times: in 1969, 1970, and 1971; in 1998, 1999, and 2000; in 2002, 2003, and 2004. 2005 marked the first time when four vintages had been produced in a row. The 40 white Dom Pérignon vintages up to 2005 are: 1921, 1926, 1928, 1929, 1934, 1943, 1947, 1949, 1952, 1953, 1955, 1959, 1961, 1962, 1964, 1966, 1969, 1970, 1971, 1973, 1975, 1976, 1978, 1980, 1982, 1983, 1985, 1988, 1990, 1992, 1993, 1995, 1996, 1998, 1999, 2000, 2002, 2003, 2004, and 2005. Since 1959 a rosé version of Dom Pérignon is also produced. 24 Dom Pérignon Rosé vintages have been produced until 2004: 1959, 1962, 1964, 1966, 1969, 1971, 1973, 1975, 1978, 1980, 1982, 1985, 1986 (the only rosé vintage where the white version was not produced), 1988, 1990, 1992, 1993, 1995, 1996, 1998, 2000, 2002, 2003, and 2004."

  "2008 was dominated by grey, overcast skies–an exception in a decade characterized by bold, generous sunshine. Just when the harvest was getting underway, the weather conditions were finally perfect: blue skies and prolonged north-northeasterly winds. The grapes were riper than anyone dared hope, and had truly outstanding balance. The vines were in perfect health. To the bracing acidity, concision and aromatic purity expected of the 2008 vintage, Dom Pérignon adds depth, density and complexity. The light is warmer and less harsh. The opening bouquet is complex and luminous, a mingling of white flowers, citrus and stone fruit. The overall effect is enhanced by the freshness of aniseed and crushed mint. The final aromas offered by the wine are starting to show spicy, woody and roasted notes. After a long period of reluctance, the wine is finally opening up. There is complete balance between the nose and the palate. Its slender, minimalist, pure, toned, athletic character is now also expressed with warmth. The fruit is pronounced and clear. The vintage's characteristic acidity is remarkably well integrated. Its persistence is mainly aromatic, grey, smoky and highly promising."
